Garlic and parsley toast

Serves 2 · About 10 minutes

Mix 2 tablespoons softened butter or olive oil with ¼ teaspoon garlic powder, ½ teaspoon dried parsley and a pinch of salt. Spread over 4 slices of bread. Bake at 180°C for about 6–8 minutes, until crisp at the edges. Check early, as ovens and bread thickness vary.

Pepper and rosemary potatoes

Serves 2–3 · About 40 minutes

Cut 500 g potatoes into small, even pieces. Toss with 1½ tablespoons oil, ½ teaspoon lightly crushed rosemary, ¼ teaspoon freshly ground black pepper and salt to taste. Spread on a baking tray and roast at 200°C for 30–35 minutes, turning halfway, until golden and tender when pierced.

Oregano tomato pasta

Serves 2 · About 20 minutes

Cook 160–180 g pasta according to its packet. Meanwhile, warm 1 tablespoon olive oil in a pan and add 250 g chopped tomatoes, ½ teaspoon oregano, a small pinch of chilli flakes and salt to taste. Simmer for 10–12 minutes. Toss with the drained pasta, adding a little reserved pasta water to loosen the sauce.

Cardamom chai

Makes 2 small cups · About 10 minutes

Lightly crush 2 cardamom pods. Simmer them in 200 ml water for 3–4 minutes. Add 2 teaspoons loose black tea and 150 ml milk, then simmer gently for another 2–3 minutes, watching the pan to prevent it boiling over. Strain and sweeten to taste. Adjust the tea and milk to your preference.

Finish with freshly ground pepper

Grind whole pepper over soup, roasted vegetables or eggs just before serving. Begin with a little, taste and add more as needed.

Use dried herbs a little at a time

Rub oregano or rosemary lightly between your fingers before adding them to a sauce or marinade. Let the flavour develop before adding more.
